Anthocyanin is volatile and delicate. When not properly handled, discoloration of the color pigment can occur due to their high level of reactiving. Anthocyanin are usually prone to attack by compounds such as nucleophilic, water, hydrogen peroxide among other acidic substances such as ascorbic acid and Sulphur dioxide. Such nucleophilic attacks lead to the formation of other colors on plant in the phenolic group, that replaces the purple, red or blue color in them. the acidity or alkalinity has effects on the anthocyanin, where they change color.
